Florida ran cattle a century before Texas did, and the whip-cracking 'cracker' cow hunters who drove scrub cows across this prairie named a whole people. The official Cracker Trail crosses the peninsula through the part of Florida tourists never see: palmetto range, phosphate rivers, a castle built from printing plates, one of the state's original parks, and the cattle-auction town on the big lake. Riders still cross the whole thing on horseback every February.
